'WILDCARD' Food and Wine pairing Tio Pepe En Rama
With Sherry Week just around the corner, the chaps see what pairs well with TIO PEPE Fino En Rama, from the classic of olives through to a slightly less conventional MacDonalds Filet-O-Fish. You might be surprised with the results...
Riesling… with Food
If I could only drink one grape variety for the rest of my life It would have to be Riesling. It's the most diverse and complex white grape with vibrant acidity and tantalising fruit. It is almost never masked by - and doesn't need - new oak. It's pure, ripe and not cloying or buttery. Don't get me wrong though - oak can be used to make some fantastic wines I'm not knocking it, but Riesling is a stand alone grape that best represents and reflects the land on which it's grown.
Like a wine ninja!' - Villa Wolf Dry Riesling
Matthew and Thomas are ready to give you a Riesling to love German wine in this video!
The Villa Wolf Dry Riesling comes from Germany's Pfalz region, and is a fantastically aromatic, refreshing wine. A crowd-pleaser if ever there was one!
"It's finger lickin' good" - Furleigh Estate Classic Cuvee food pairing
Thom and Matthew see only one way to bid farewell to Matthew and that is to over indulge.
Find out what the chaps think to their choices of food matching from the conservative Brie and Smoked Salmon and cream cheese to the outright stupid wildcard of a KFC Bargain Bucket.
'Nine peppercorns' - Cotswold Dry Gin

Getting in the Spirit "Plantation Stiggins' Fancy Pineapple Rum"
Matt and Thom imbibe in a rum inspired by the tipple of choice of Reverend Stiggins from Charles Dickens' Pickwick Papers. Pineapple Rum. Not just another rum liqueur pumped full of sugar, rather a rum infused with fresh pineapple.
Sherry - The Worlds Most Undervalued Wine
Xeres, Jerez, Sherry, Granny's tipple; whatever you call it - for me this southern Spanish region produces the most unique, diverse and undervalued wine in the world.
Wines of Chile
My first experience of Chilean wine was back in my student days, when various supermarkets offered three bottles of wine for ten pounds! What a fantastic deal, if not a little irresponsible. Many of the wines available happened to be Chilean, often Merlot and Sauvignon Blanc. As you can probably imagine, these wines were not of the greatest quality, but that most certainly wasn't my primary reason for buying them. As a result of deals like this, Chile is a wine producing country is that is associated with being cheap and cheerful.
This Tastes eXTlent' - XT Brewery
Oxfordshire is home to plenty of top class brewers and distillers, here is one of our favourite brewers.
XT Brewery can be found just outside of Oxford and is committed to showing everyone just how good they are at creating a vast range of premium quality beers. Using international malts and hops they create beers with a real sense of place.
Chilled Red
I will never forget growing up and regularly seeing a bottle of red resting on top of the dining room cabinet next to the hot water pipe "warming nicely for dinner". This seemed normal to me at the time: red at room temperature (if not warmer) and white chilled. No matter what the wine, this was and still is a common misconception of wine consumers today.
English Wine and Food Pairings
The quality of English fizz has never been better. In the last 16 years, English sparkling wines have won nine trophies for Best International Sparkling Wine, and six trophies for Best Sparkling Rosé in global competitions. This has never been achieved by any other country. A lot of good restaurants are serving English fizz by the glass, as its natural high acidity and ripe fruit complexity make for the perfect aperitif. The light aromatic whites really come into their own when put up against tricky to pair foods such as English asparagus & artichokes.
